Gajarachi Koshimbir

Fresh salad made from grated carrots.

Ingredients

  • 1 cup carrot, grated
  • 1 tomato, medium sized finely chopped
  • 2 green chillies, finely chopped
  • 1/2 cup coriander leaves, chopped
  • 1 tablespoon groundnut, roasted halved
  • 1 teaspoon lemon juice
  • 1 pinch hing
  • 1/2 teaspoon cumin seed powder
  • 1 teaspoon ghee
  • 1 teaspoon sugar, as per taste
  • Salt as per taste

Instructions

  1. Mix carrots, tomatoes, green chillies and coriander leaves.
  2. Add cumin seed powder, hing and little ghee.
  3. Adjust taste with sugar, salt and lemon juice.
  4. Serve gajarchi koshimbir as side dish.
