Subzi Diwani Handi

Mixed vegetables cooked slowly in a handi

Ingredients

  • 1 Bunch Fenugreek Leaves(Methi), Finely chopped
  • 2 Baby Eggplant/Brinjal, finely chopped
  • 1/2 cup Green Peas
  • 2 Carrot, finely chopped
  • 10 French Beans, finely chopped
  • 6 teaspoons Oil
  • 2 Onions, finely chopped
  • 1 teaspoon Ginger garlic paste
  • 2 green chillies, finely chopped
  • Coriander leaves, finely chopped
  • Mint leaves, finely chopped
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • Salt – to taste
  • 2 teaspoons Lemon juice

Instructions

  1. Heat oil. Fry onions till soft. Add and fry ginger garlic paste for 30 seconds.
  2. Add chopped vegetables, red chilli powder, turmeric powder and little water. Mix. Cook covered till vegetables are tender.
  3. Adjust taste with salt, lemon juice and green chillies. Simmer. Add coriander and mint leaves. Cook uncovered for 10 minutes.
  4. Server Subzi Diwani Handi with roti.
