Subzi Diwani Handi
Mixed vegetables cooked slowly in a handi

Ingredients
- 1 Bunch Fenugreek Leaves(Methi), Finely chopped
- 2 Baby Eggplant/Brinjal, finely chopped
- 1/2 cup Green Peas
- 2 Carrot, finely chopped
- 10 French Beans, finely chopped
- 6 teaspoons Oil
- 2 Onions, finely chopped
- 1 teaspoon Ginger garlic paste
- 2 green chillies, finely chopped
- Coriander leaves, finely chopped
- Mint leaves, finely chopped
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- Salt – to taste
- 2 teaspoons Lemon juice
Instructions
- Heat oil. Fry onions till soft. Add and fry ginger garlic paste for 30 seconds.
- Add chopped vegetables, red chilli powder, turmeric powder and little water. Mix. Cook covered till vegetables are tender.
- Adjust taste with salt, lemon juice and green chillies. Simmer. Add coriander and mint leaves. Cook uncovered for 10 minutes.
- Server Subzi Diwani Handi with roti.
