Shayya Biryani

Rice Biryani is a popular and common. Shayya Biryani uses thick vermicelli / shayya / shavige instead of rice. It is served along with raw mango coconut chutney .

Ingredients

  • Fresh Mint leaves, chopped
  • Few strands of saffron, soaked in water
  • 1 teaspoon Ghee
  • 1/4 cup onions, fried
  • 1 teaspoon Lime juice
  • 3/4 cup Yogurt
  • 1/2 teaspoon Red chili powder
  • 1/4 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Ginger garlic paste
  • 3 tablespoons Oil
  • Coriander leaves, chopped
  • 3 Green chillies
  • 1 onion, thin long chops
  • 1/2 teaspoon Peppercorn
  • 4 cardamom, whole
  • 1 Bay leaf
  • 1 Cinnamon, inch long stick
  • 1/2 teaspoon Jeera / cumin seeds
  • Salt - to taste.
  • 1 cup Vermicelli / shevai / semige

Instructions

  1. Heat Oil and roast vermicelli till light brown.
  2. Add water and allow to cook. Pour saffron water over it. Keep aside
  3. Heat Oil and fry dry spices - cumin seeds, bay leaves, cardamom, pepper, cinnamon. Saute.
  4. Add remaining ingredients and stir.
  5. In a large pan, place a layer of vermicelli. Then add another layer of the mixture. Top it up with another layer of vermicelli.
  6. Cover and cook slowly for 5-10 minutes.
  7. Garnish with ghee, coriander leaves and fried onions.
  8. Serve Shayya Biryani hot along with chutney / raita.
