Rajgira Batata Wada

Rajgira Batata Vada is a popular snack which is made mostly during Navaratri fasting. It tastes delicious when served with coriander chutney or curd.

Ingredients

For filling

  • 3 cups potatoes, boiled and mashed
  • Oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1 sprig curry leaves
  • 1 teaspoon green chili paste
  • 1 teaspoon ginger paste
  • Salt to taste
  • Juice of half a lemon
  • 1 tablespoon coriander leaves
  • Oil for frying

For batter

  • 2 cups rajgira /amaranth Flour
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon black pepper powder
  • Salt to taste

Instructions

  1. Prepare the batter by mixing all the batter ingredients in a large bowl. Keep aside.
  2. Heat ½ tbsp oil in a pan. Splutter cumin seeds and curry leaves. Add green chilli paste, ginger paste and sauté for a minute.
  3. Add mashed potatoes, turmeric powder, coriander leaves, lemon juice, and salt. Mix well.
  4. Divide the mixture into small balls and keep aside.
  5. Heat oil. Dip the potato balls in the batter and deep fry them until they turn light golden brown.
  6. Serve rajgira batata vada hot with green chutney.
