Pani Puri

Tangy street food with crunchy puri filled with potato mash and tamarind water.


For puri

  • 1/2 cup Sooji / Rava
  • 4 tablespoons Maida / All purpose flour
  • 1 pinch Baking Powder
  • 2 tablespoons Oil
  • Salt to taste

For making Potato filling

  • 1 cup Boiled potato (cubed/smashed)
  • 1/2 cup boiled whole moong dal
  • 1/2 teaspoon Chilli Powder
  • 1/4 teaspoon Amchur powder
  • 1/2 cup chopped Cilantro
  • Salt to taste

For Tamarind water

  • Tamarind (Small lemon size)
  • 1/2 teaspoon cumin seed powder
  • 3 teaspoons salt
  • 1/4 teaspoon Amchur powder.
  • Salt to taste


  1. Knead dough by mixing puri ingredients with water. Roll piece of dough into roti. Cut small round shapes using lid.
  2. Deep fry them in hot oil till golden brown.
  3. Mash boiled potato and moong with all spice mixture.
  4. Soak the tamarind in a cup of water for an hour and extract the tamarind pulp. Add all other ingredients and mix well.
  5. With each puri, punch a hole using thumb. Fill potato mixture. Dip in tamarind water and gulp Pani Puri!
