Khar is very commonly used in Assamese recipes. As per saying, ‘khar khuwa asomiya’ it is impossible for an Assamese without liking for khar.
Khar means alkali, is made from banana peel or its trunk. Aathiya or Bheem kol are commonly used local banana varieties used to make kola khar. Kola khar is alkali liquid made from ash of sundried and burnt banana peel.

- Burn this and collect the ashes.
- Mix ashes in a cup of water and let it rest for 12 hours.
- Filter and collect clear water.
