Aagri Koli Masala

Aagri Koli Masala is a spice mix of around 15+ spices used by Aagri / Koli – fishermen community from coastal Maharashtra.

Ingredients

  • 3 Bay leaves / Tej patta
  • 1 tablespoon Cumin seeds
  • 2 tablespoons whole coriander seeds
  • 1/2 teaspoon Black Cumin seeds
  • 1 teaspoon Cloves / lavang
  • 1/4 teaspoon Asfoetida / hinga
  • 1 Mace
  • 1 Nutmeg
  • 6 Green Cardamom
  • 2 Cinnamon sticks
  • 300 gm Dry Red Chillies (Adjust varieties to desired blend of redness and hotness)
  • 1 teaspoon Teppal / Triphal / Sichuan Pepper, husks
  • 1 tablespoon mustard seeds / rai
  • 1/2 teaspoon Nakeshwar (tailed clove)
  • 1 teaspoon turmeric powder / Halad powder
  • 1 tablespoon poppy seeds / Khas khas
  • 1 tablespoon Stone Flower / Dried Lichen
  • 2 Black Cardamoms / Kali elaichi
  • 3 Star Anise
  • 1 teaspoon Black Pepper corns

Instructions

  1. Dry roast all whole ingredients till they release aroma.
  2. Grind roasted ingredients with turmeric powder.
  3. Store Aagri Koli Masala in airtight container.
