Kappa Stew

Kappa stew is a delicious curry, prepared by cooking tapioca in coconut milk and spices. It is very simple and flavor packed dish that requires only minimal ingredients.

Ingredients

  • 2 cups tapioca / kappa, washed and boiled in salted water
  • 1 medium onion, sliced
  • 1 tablespoon ginger garlic, crushed
  • 2 -3 green chillies, vertically sliced
  • 1/2 cup green peas
  • 2 -3 cloves
  • 1 piece cinnamon, inch long
  • 1 teaspoon whole pepper corn
  • 1 bay leaf
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon pepper powder
  • 1 1/2 cups thin coconut milk
  • 1/2 cup thick coconut milk
  • 2 tablespoons coconut oil
  • 1 sprig curry leaves

Instructions

  1. Sauté whole spices and ginger garlic in coconut oil till the raw smell disappears.
  2. Add sliced onions, green chillies and curry leaves, sauté until golden brown.
  3. Add green peas, cooked tapioca, spice powders and thin coconut milk and simmer for 5-7 mins.
  4. Add in the thick coconut milk, bring to a boil and switch off.
  5. Serve kappa stew warm with idiyappam/ vellayappam/ kallappam.
