Rajasthani Dal dhokali

Dal dhokali is dish popular in Rajasthan and Gujarat. Dal dhokali to explain in simple way is a flour pasta in lentil curry. This version here is of Rajasthani Dal dhokali.


For Dhokali

  • 1 tablespoon gram flour
  • 1 cup wheat flour
  • 1/2 teaspoon ajwain
  • 2 teaspoons ghee
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 Cumin seed powder / jeera powder
  • Salt

For dal and temper

  • 1 cup tur dal
  • 2 teaspoons oil
  • 1/2 teaspoon cumin seeds
  • 1 pinch hing
  • Dry red chilli
  • few curry leaves
  • 1 teaspoon ginger garlic paste
  • 3 green chillies, chopped
  • 2 tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon coriander seed powder
  • Salt
  • 1/2 teaspoon garam masala


  1. Mix all dhokali ingredients. Knead into thick dough with little water.
  2. Take small pieces of dough and press with palm into thin round disc. Punch a small hole in center with finger. This is hand made dhokali.
  3. Make dhokali with rest of dough. Keep aside. (one can also make dhokali by rolling a piece of dough into roti and cutting diamond shapes)
  4. Pressure cook dal with water. Once cooked blend till smooth. Add salt and turmeric powder. Keep aside.
  5. Boil about a liter of water. Release dhokli one by one in hot water.
  6. Allow dhokali to cook for 10 minutes.
  7. Heat oil in pan. Splutter curry leaves, hing, cumin seeds, dry red chilli, green chillies, and ginger garlic paste. Saute.
  8. Add tomatoes, red chilli powder, turmeric powder, coriander seed powder and garam masala.
  9. Cook till tomatoes are soft.
  10. Add dal and mix well.
  11. Add dhokali along with water in dal and mix well.
  12. Bring dal to boil. Simmer for 3-5 minutes.
  13. Garnish with coriander leaves.
  14. Serve Dal dhokali hot with generous ghee.
