Ennai Kathirikai Kariyamudhu

Ennai Kathirikai Kariyamudhu is a delicious Tamil Nadu dish enjoyed with plain rice or served as part of a thali. Brinjals are stuffed with various spices and then roasted or fried to perfection.

Ingredients

  • 10 Brinjals
  • 1/4 teaspoon Mustard seeds
  • 1 pinch Hing / Asafoetida
  • 1/4 teaspoon Turmeric powder
  • Salt to taste
  • 1 cup Coriander seeds
  • 8 teaspoons Channa dal
  • 2 teaspoons Methi seeds
  • 1 teaspoon Pepper
  • 16 Dry red chillies
  • 3 strands Curry leaves
  • Salt to taste
  • 2 teaspoons Oil

Instructions

  1. Heat oil and fry chillies. Keep aside.
  2. In the same pan, fry coriander seeds, channa dal, methi seeds, pepper, dry red chillies, curry leaves, salt and asafetida one by one separately until golden brown. Powder the ingredients coarsely and store in an air-tight container. This is All Purpose Karaiyamudhu powder.
  3. Place a cross cut on bottom flat portion of brinjal, while leaving stem end intact. Keep in water to avoid discoloring.
  4. Mix All Purpose Karaiyamudhu powder and little salt. Stuff powder in brinjals.
  5. Heat oil, temper with mustard seeds, add turmeric powder, asafetida, salt. Stir fry stuffed brinjals.
  6. Cover and cook slowly for some time.
  7. Serve Ennai kathirikkai kariamudhu with curd rice / paratha.
