Valor Muthia nu shaak

Surati papdi is a seasonal vegetable available in winters. It is very popular in Gujarat and lot of popular recipes are made using surati papdi or Valor papdi. Valor Muthia nu shaak or Surti papdi liva aur muthiya nu shaak is one such popular recipe using these delicious beans. Valor muthia nu shaak blends these beans with deep fried flour dumplings.

 

Ingredients

  • 1/2 cup wheat flour / atta
  • 2 dried red chillies
  • 1 tablespoon dry coconut, grated
  • 2 teaspoons sesame seeds
  • 1 piece cinnamon stick, inch long
  • 2 cloves
  • 1/2 teaspoon hing
  • 1/4 cup coriander leaves
  • 4 Green garlic, chopped
  • 150 grams spinach leaves / palak
  • 1 tablespoon besan
  • 200 grams Surti papdi dana / broad beans, boiled
  • Oil
  • 1 teaspoon sesame seeds, for muthia
  • Salt
  • 1 teaspoon sugar
  • 1 teaspoon ginger paste
  • 4 green chillies, minced
  • 1 pinch turmeric powder
  • 1 pinch hing
  • 1 cup methi leaves, chopped

Instructions

  1. Boil surati dana with little water and salt. Keep aside.
  2. Mix methi leaves with hing, turmeric powder, green chillies, ginger paste, sugar, salt, sesame seeds and oil.
  3. Now add wheat flour and besan. Mix well. Add little water and knead into thick dough.
  4. Make small lemon sized balls out of the dough.
  5. Deep fry dough balls on low flame till brown on all sides to make methi muthia. Strain and keep aside.
  6. Blanch spinach in hot water along with little salt and sugar.
  7. Strain blanched palak leaves and place in cold water to retain green colour.
  8. Grind blanched palak along with green garlic and coriander leaves to make green gravy.
  9. Heat oil in a pan. Splutter clove, cinammon, and sesame seeds. Saute.
  10. Add boiled papdi dana and little water.
  11. Bring to boil. Now add grated coconut and palak paste.
  12. Simmer for 5-10 minutes till all ingredients are blended.
  13. Adjust taste with salt and sugar.
  14. Add methi muthia and continue heating for 3-5 minutes.
  15. Temper with hot oil, fried dried red chillies and chopped garlic.
  16. Serve valor muthia nu shaak with bajri roti.
