Rasiya Muthia
Cooked rice muthia in yogurt-spices gravy also called as rasawala muthia.

Ingredients
For Muthia
- 1 cup Cooked rice
- 2 tablespoons Chickpea flour / Besan
- 2 tablespoons Whole wheat flour
- 1 Green chili, finely chopped
- 2 teaspoons Ginger , grated
- 1/2 teaspoon Coriander powder
- 1/2 teaspoon Red chili powder
- 1/4 teaspoon Turmeric powder
- Sugar, a pinch
- 1 teaspoon Lemon juice
- Salt - to taste
For Gravy
- 1/4 cup Yogurt
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Red chili powder
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Coriander powder
- 1 tablespoon Oil
- 1/4 teaspoon Mustard seeds
- 1/4 teaspoon Cumin seeds
- 4 Curry leaves
- 1/2 teaspoon grated ginger
- 1 Green chilies finely chopped
- Salt - to taste
- Coriander leaves - few sprigs finely chopped
Instructions
- Mix cooked rice, flour and besan along with chopped chillies, ginger, turmeric powder, coriander seed powder, chilli powder, salt, lemon juice and little sugar well. Knead into dough without adding water.
- Make small flat bead shaped muthias from dough and keep aside.
- Mix with yogurt turmeric, red chili, cumin, coriander powder and salt. Add water and keep aside.
- Heat oil. Splutter mustard seeds, cumin seeds, green chillies, ginger and curry leaves.
- Add yogurt mixture and bring to boil. Add muthias slowly and simmer till muthias are cooked.
- Garnish with coriander leaves and serve Rasiya Muthia hot with roti or rice.
