Kaju lasan nu shaak

This is a famous recipe from Surat. Kaju lasan nu shaak is curry made by cooking cashew nuts along with spicy palak green gravy and mild flavours of green garlic.


  • 1 cup cashew nuts
  • 1 cup green garlic, chopped
  • 1 cup palak, chopped
  • 1/2 cup raw tomato, chopped
  • 1/2 cup tomato, chopped
  • 1 cup onion, chopped
  • coriander leaves
  • 1 piece ginger, 1/2 inch long, chopped
  • 2 bay leaves
  • 2 caradamom
  • 1 cinammon, small piece
  • 5 black peppercorns
  • 2 cloves
  • 1 teaspoon cumin seeds
  • 3 green chillies, chopped
  • Curry leaves
  • oil
  • garam masala
  • 2 teaspoons melon seeds / magajtari
  • malai / cream


  1. Heat a tbsp oil. Roast half cashew nuts till light brown. Remove and keep aside.
  2. In same oil, roast dry spices - black pepper corns, cinnamon,cardamom, cloves, bay leaves, and cumin seeds along with ginger and green chilies.
  3. Add oil and cook till changes to light brown.
  4. Add raw tomatoes and red tomatoes. Cook till tomatoes are cooked.
  5. Add unroasted cashew nuts and melon seeds.
  6. Add spinach leaves and cook till leaves appear blanched.
  7. Allow to cook and grind to smooth paste into green gravy. Keep aside.
  8. Heat 1 tbsp oil in another pan. Splutter cumin seeds.
  9. Add gravy and roast for 3-5 minutes till oil separates.
  10. Now add green garlic and mix. Continue cookinng for 4-5 minutes.
  11. Add coriander leaves and mix.
  12. Add malai and adjust consistency with water.
  13. Adjust taste with salt and garam masala.
  14. Add roasted cashew nuts and continue cooking for 5 minutes.
  15. Serve Kaju lasan nu shaak hot with roti.
