Kadhai Paneer

Kadhai paneer is a traditional Indian dish made with Indian cottage cheese (paneer), capsicum, onion, tomato and spices. It pairs well with Naan or Paratha.

Ingredients

Dry Spice Mix

  • 1 Tej Patta / Bay Leaves
  • 1/2 teaspoon Peppercorns
  • 5 Elaichi / Cardamons
  • 1/2 teaspoon Cloves
  • 1 1/2 teaspoons Fennel Seeds
  • 1 tablespoon Cumin Seeds
  • 3 tablespoons Coriander Seeds

Onion Tomato Paste

  • 2 tablespoons Oil
  • 1 Onions
  • 3 Tomatoes
  • 1 teaspoon Salt

Gravy

  • 2 tablespoons Butter
  • 1 Tej Patta / Bay Leaves
  • 4 Dry Red Chillies
  • 1 1/2 tablespoons Garlic
  • 1 inch Ginger
  • 4 Green Chillies, slit
  • 1 Onion
  • 1 small Bell Peppers / Capsicum, thinly Sliced
  • 1 Bell Pepper, Square Cut
  • 1/2 teaspoon Turmeric powder
  • 1 1/2 teaspoons Salt
  • 3 teaspoons Kasmiri Red Chilli Powder
  • 1 cup Water
  • 1 teaspoon Cream
  • 500 grams Paneer

Instructions

  1. Dry roast all the spices for Dry spice mix and grind into coarse powder.
  2. Heat oil in a pan. Fry onions till translucent.
  3. Add tomatoes and salt. Cook till the tomatoes are properly cooked.
  4. Grind onion and tomato into a fine paste. Keep aside.
  5. In the same pan add butter, Bay leaf and Dry Red Chillies. Roast for 30 seconds.
  6. Add Garlic, Ginger, Green Chillies, thinly sliced Capsicum, square cut Onions and square cut Capsicum. Cook for 3-5 minutes.
  7. Add onion and tomato paste, salt, turmeric, kashmiri red chilli powder and the dry spice mix. Cook well .
  8. Add Cream and Water. Mix and cook for 1 to 2 minutes.
  9. Finally place paneer. Cover with lid and cook on low for 10 minutes.
  10. Serve Kadhai paneer with naan or paratha.
