Gutti Dondakaya Vepudu

Gutti Dondakaya Vepudu is a tasty stir fry dish from Andhra. It is a simple dish prepared by stuffing Tindora / Ivy Gourd with a special Andhra style spice blend. It goes well with rice.

Ingredients

  • 250 grams Dondakaya /Tindora, slit lengthwise without cutting off the bottom end
  • 3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • A few Curry leaves
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Turmeric powder
  • 1/4 teaspoon Asafetida
  • Coriander leaves for garnish

For Stuffing

  • 6 Dry Red Chilli
  • 2 tablespoons Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Sesame seeds
  • 1 1/2 tablespoons Chana dal
  • 2 tablespoons Dry coconut powder

Instructions

  1. Roast coriander seeds, cumin seeds, sesame seeds and chana dal in little oil. Keep aside.
  2. In the same pan dry roast the sesame seeds along with dry red chilies for few minutes. Let them cool and grind it along with dry coconut powder, turmeric powder, asafetida & salt into a coarse powder.
  3. Stuff this powder in each ivy gourd.
  4. Heat oil, splutter cumin seeds and curry leaves and fry the stuffed tindora on low medium flame for 5 minutes.
  5. Cover with a lid and cook for 20 minutes. Garnish with chopped coriander leaves
  6. Serve Gutti Dondakaya Vepudu with rice.
