Sindhi Saibhaji

Sindhi style spinach dish, known as saibhaji cooked along with amaranth leaves

Ingredients

  • 1 cup Spinach, finely chopped
  • 1/2 cup Channa Dal, soaked for an hour
  • 1/4 cup Moong dal, soaked for an hour
  • 1/2 bunch Red Amaranth leaves / Laal Maat
  • Khatta / chuuka, khatti paalak, few leaves
  • Dill leaves / Sua, few leaves
  • Fenugreek leaves, few
  • 2 Onions
  • 1 potato, chopped
  • 2 Tomatoes, chopped
  • 1 Brinjal, small chopped
  • 1 tablespoon Oil
  • 3 Green Chillies
  • 1/4 teaspoon Turmeric Powder
  • 1 teaspoon Coriander powder
  • Salt to taste
  • 1 teaspoon Ginger, grated
  • Oil
  • Cumin seeds

Instructions

  1. Pressure cook chopped vegetables, tomatoes, chopped green leaves, green chillies, ginger, dry spices and soaked dal till tender and cooked.
  2. Mash dal with wooden whisker. Temper with hot oil and fried cumin seeds.
  3. Serve Sindhi Saibhaji with rice or roti
