Litti Choka

Roasted stuffed wheat flour dough served with spiced mashed potatoes

Ingredients

For Choka

  • 3 Potatoes
  • 1 Onion
  • 4 Garlic, cloves
  • 1 Tomato
  • 3 Green Chilly
  • 1/4 cup Coriander Leaves
  • 1 teaspoon Mustard Oil
  • Salt-to taste

For Litti Dough

  • 2 cups Wheat Flour
  • 2 tablespoons Ghee
  • 1/2 teaspoon Ajwain/ carom Seeds
  • Salt-to taste
  • 1/4 teaspoon Baking Soda

For Litti Filling / Pitti

  • 1/2 cup Sattu Flour
  • 1 tablespoon Mustard Oil
  • Ginger-1/2″ piece, grated
  • 2 Green Chilly, chopped finely
  • 1/2 cup Coriander Leaves, chopped
  • 1/2 teaspoon Cumin Seeds
  • 1/2 teaspoon Ajwain/ Carom Seeds
  • 1/2 tablespoon Lemon Juice
  • 1 tablespoon Pickle Spice / achari masala
  • Salt-to taste

Instructions

  1. Pressure cook potatoes. Peel and mash. Similarly steam tomatoes, peel and mash.
  2. Mix potato and tomato mash with salt, coriander leaves, chopped green chillies, garlic paste and mustard oil. Mix well. Keep Choka aside.
  3. Mix all filling ingredients and keep aside.
  4. Knead wheat flour along with ajwain seeds, baking soda, salt, ghee and little water into firm dough. Rest for some time.
  5. Take tomato shaped dough piece and press into disc. Place the filling in center and close the edges and roll into ball again.
  6. Bake for 40 minutes till brown evenly. Turn in between.
  7. Dunk littis with ghee and serve hot with choka.
