Banarasi Tamatar chaat

Popular recipe found on the streets of Banaras. Unlike other chaats, this does not contain any sweet/tangy chutney. The recipe is a perfect mix of onion-tomato-potato seasoned spices.

Ingredients

For Tamatar Gravy

  • 1 teaspoon red chilli powder
  • 1/2 teaspoon sugar
  • Salt
  • 1 tomato, medium chopped
  • 1 cup tomato puree, fresh
  • 1 chopped onion, to garnish
  • Savory fried dal, to garnish
  • Sev, to garnish
  • Coriander leaves
  • Lemon Juice
  • 1/2 teaspoon cumin powder
  • 1/2 tablespoon khoya / khava
  • 1 tablespoon broken cashew nuts
  • 1 tablespoon oil
  • 1 teaspoon ginger, finely chopped
  • 1/2 tbp red chilli paste
  • 1 teaspoon poppy seeds
  • Ginger, strips to garnish

For tikki

  • 2 potato, boiled and grated
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • Salt
  • 1 tablespoon coriander leaves, fresh,chopped

Instructions

  1. Mix potato with cumin powder, chaat masala and coriander leaves well into dough. Make small flat balls and shallow fry to make crispy faces. Keep aside.
  2. Heat oil. Roast ginger, red chilli paste, poppy seeds, cashew nuts and khava.
  3. Add cumin powder and red chilli powder. Add sugar and salt. Add little water and mix well.
  4. Add chopped tomato and cook till mushy. Add tomato puree and continue cooking for 2-3 minutes. Gravy is ready.
  5. In a serving bowl, crush tikki in bottom. Pour tamatar gravy and garnish with coriander leaves, sev, dal, coriander leaves, ginger strips and dash of lemon juice. Serve your banarasi tamatar chaat as snack.
