Doodhi Halwa

Dessert made from fibrous bottle gourd


  • 3 cups Doodhi or Bottle gourd, shredded
  • 3 tablespoons Ghee
  • 3 cups milk
  • 1/2 teaspoon Cardamom powder
  • 3/4 cup Sugar
  • almonds, cut as required


  1. Roast lauki in hot ghee in a pan for 10 minutes till tender.
  2. Add warm milk, cardamom powder and bring to boil.
  3. Simmer for 30-40 minutes till milk is reduced to half and add sugar.
  4. Continue cooking for 10 minutes. Add almonds.
  5. Serve dudhi halwa warm or cold.
