Al Yakhni

Bottle gourd cooked in spicy yogurt curry

Ingredients

  • 400 grams Bottle Gourd / Lauki, peel and chop in big pieces
  • 1 cup Yogurt / Dahi, whisked
  • 2 teaspoons Cooking Oil
  • 1 teaspoon Cumin Seeds
  • 2 Black Cardamom
  • 4 Cloves
  • 1/4 teaspoon Asafoetida / Hing powder
  • 1 1/2 teaspoons Fennel Seeds
  • 1/3 teaspoon Turmeric Powder
  • 1 teaspoon Red Chilli powder
  • 3/4 teaspoon Garam Masala Powder
  • 1 1/2 teaspoons Dry Ginger Powder
  • 1/2 teaspoon Salt

Instructions

  1. Deep fry lauki till cooked and soft. Drain and keep aside.
  2. Heat oil. Roast cumin, asafoetida, cloves and cardamom till golden.
  3. Add yogurt and spices. Cook for 2 minutes while stirring.
  4. Add 1/2 cup of water and fried lauki. Cook covered for 2 minutes.
  5. Garnish with fresh coriander. Serve Al Yakhni with roti.
